For two years in a row, the artisans of the Brise-Bise have seen their skills awarded. In 2004, Chef Renée Roy won the first place with her delicious recipe. The local dish called “brandade de morue” is a codfish based stew perfumed with fresh herbs and served with caramelized vegetables and olives. In 2005, it was Chef Isabelle Côté’s turn to get the honors, receiving the second prize for a recipe made out of the famous “Gaspe cure”, the salted cod produced in the region. It’s prepared the traditional way and served with tomato chutney. CLICK TO DOWNLOAD THE RECIPE (french version only) >>
